Montasio DOP (Protected Designation of Origin) is produced exclusively using milk produced by the company’s cows, bred according to organic rules. “Their well-being is at the heart of our work, which is why the milk is also TSG (Traditional Specialties Guaranteed) Haymilk certified. The two certifications (DOP and TSG Haymilk) guarantee not only respect for the traditional farming methods, but also that everything the cattle eat is organic. ‘Latteria’ is a Friulian variety of cheese that comes from the tradition of the ‘latterie turnarie’, a type of cooperative dairies which were once common in Friuli: the families of breeders in the area used these structures in turn to produce their cheese. The cheeses you’ll find at La Sisile are all produced exclusively by using certified organic farm milk and STG Haymilk. The high quality of the milk allows the farm to process it raw, which infuses the cheese with all the traditional flavors, as well as taste variability according to the natural seasonality of cow feeding.
